I think they only just in this version changed from view panning with the mouse to the keyboard. Not entirely sure why they wouldn't just go ahead and leave in the other option.

how come the pony stays a pony but the pikachu or whatever becomes a human girl?

I dunno which ones are new, but there currently 11 characters in the game; Undyne, Peach, Twilight, Pinkie Pie, Rainbow Dash, Braixen, Pikachu, Sienna, Nicole, Ankha and Susie.
