After several failed attempts to slim down Windows 10 manually, I finally tried modified Win10 ISO from my friend, no ads/'news', lighter number of processes etc. but once Edge is installed all ads/'news' come back again

No one is likely to expose you to your friends and family aside from you yourself, or a governmental deep-dive into your computers and IP addresses.
Maybe you or someone you know is a barrister? Set up a trust as a shell corporation that pays you as a beneficiary. Attorney-client privilege. You get to claim that you don't know why you're receiving the money, and the attorney/trustee gets the benefit if not being able to divulge privileged information. Then, your only worry would be blackhat hackers, and there's no stopping those folks if they deem you worthy of their efforts.
