I am looking to create a game where you control the movement of the animation and it is combined with sound effects. I take ohmywaifu as a starting point and example. I don't know how to look for that kind of tutorials or information.

Most tutorials are going to cover normal, non-adult functionality, so you'll need to check those and use your imagination to bridge the gap. For controlling animation, you could start by looking up tutorials on building your own character controller. If you can make a character walk/run/jump, you can make them do anything.
