Well it has been so many years since you initially asked this so I don't know if you are still looking for something like this, but I am working on something very similar to what you described. It's a VN where you play as general James Ironwood after the events of Volume 8, where he gets a possibility to undo his mistakes and "interact" yet again with team RWBY in ways you can imagine.
The game is a corruption VN with 2D drawing and 3 possible routes to follow. The beta is still a work in progress, but it won't take a lot more time to be ready

I am glad you like the idea. If you are interested, you can follow me on patreon. No need to be subscribed to a tier, the game will be free for everyone anyway, and I make posts that you can see as a non-paying supporter from time to time. Regardless of that, I will remember this thread and come back to inform you once the beta of the game is released

Well it's not exactly what I was thinking, because I'd rather have a custom character that we can name instead of a Canon one, but it's really close. Keep us updated!

well I choose to go with the pre-existing character "route", but customizing his name will be an option starting from version 0.1 (so after the beta I am currently working on is done). Anyway I will remember this thread and make sure to let you know once I have an ounce of a finished product. Have a nice day
